Report from FIC Shanghai 2018

What was shown and discussed in Shanghai last week? We got a chance to talk to Edith Jiang, Technical Manager at Lyckeby Shanghai to find out more of her learnings from Food Ingredients China that was organized in Shanghai between March 22-24, 2018.

FIC China 2018 has just closed, what was your main impression of the exhibition?

The continuous improvement in the organization, layout and language skills help this event to be better and better for each year. This year, many exhibitors had prepared ready to go prototypes to offer visitors a chance for in-depth understanding of the application. One example was DuPont, in partnership with Tetra Pak, producing ready to drink packed products with their solutions: fibers, probiotic products and stabilization systems.

Technical aspects of ingredients were the main message in most of the booths. However, specific benefits like non-GMO and Clean Label become increasingly important in the Chinese market. Protein, sweeteners and starches were very visible in the show. In terms of applications, the focus was still largely on western foods, but this is surely expected to change in the near future. 

Did you see any interesting trends among the exhibitors?

There are many trends linked with clean label solutions as in Food Ingredients Europe. Also lots of functional solutions to prolong shelf life in bakery. Interesting to learn about solutions for non-dairy and vegetable yoghurts and related fermented or not fermented drinks. There are probiotic suppliers who developed cultures to remove the off taste of soya during fermentation. Some interesting fermented juices, for example fermented carrot juice could be seen. In terms of jams and fillings, I think bake stable jams are also in the trend now and in the future. In terms of processed cheese and cheese analogue, non-dairy solutions were highlighted at FIC.

From Lyckeby, what was your main objective with the exhibition?

Our key promotion this time is Lyckeby Careful solutions (Clean Label) for vegetable yoghurt, fruit preparation and cake. Also, we are promoting our solution for mochi bread, a local application we are excited about. Lyckeby SW 100 is the product name for the ingredients used in this solution.

Finally, which is the most exciting application you are working with at the moment?

It is the mochi bread mentioned above.
